Homemade Italian Sausage

In Tokyo, I have not been able to find Italian sausages that tastes like the fresh Italian deli style sausages I ate in Kansas City (KC) 30 years ago. As a result, I decided to make Italian sausage from Chicken (breast) and separately from Pork chops. I used a food processor to grind the meats and then added spices. I kept the meat in the refrigerator over night. I grilled the chicken as burgers in my weber grill. Both tasted great but the chicken was too dry. I think it is important to add fat to the chicken or alternatively use dark meat. The pork Italian sausage was very tasty as a burger or with a pasta sauce.
